12. Grains — Choosing, Preparing, Cooking

Grains are the foundation of the thali and the main source of energy. Ayurveda prefers grains that are at least a year old (purana): newly harvested grain is considered heavy and Kapha-forming, while aged grain is lighter and easier to digest. All grains are washed, often soaked, sometimes dry-roasted — each step makes them lighter.

Making any grain lighter

  • Wash until the water runs clear — removes dust and surface starch.

  • Soak: rice 20–30 min; millets 30 min; barley and whole grains overnight.

  • Dry-roast before cooking (rice for kanji, suji for upma, dalia, millets) — roasting is one of Ayurveda's classic ways to make food laghu (light).

  • Cook with a little ghee and whole spices (bay leaf, cumin, clove).

  • Eat warm and freshly cooked; never refrigerate and reheat cooked rice more than once.
