1. The Classical Pathya Kitchen (Krutanna)
Ayurveda describes a ladder of cooked rice and pulse preparations (krutanna) — from the clear liquid of manda to the thick vilepi and full meals — used to restore appetite after fasting, illness or treatment. These are the gentlest dishes in the book and the first choice for convalescent or very elderly guests. Classical texts differ slightly on water ratios; the kitchen ratios below are practical and tested in principle against those descriptions.
