G. Method, Sources & Disclaimer

  • Recipes are written for 4 servings unless stated; the café batch column multiplies the base by 5 (≈ 20 servings). For batches above ×5, increase spices and salt by ×4 first, then adjust to taste — they do not scale linearly.

  • Nutrition figures are estimates computed from ingredient weights and standard composition tables (IFCT 2017, USDA FoodData Central). They exclude cooking losses and are rounded.

  • Nutrient targets follow ICMR-NIN (2020) reference values and international guidance for older adults on protein (≈ 1.0–1.2 g/kg) and salt (< 5 g/day, WHO).

  • Ayurvedic content follows the classical ritucharya and dinacharya framework (Charaka & Ashtanga Hridaya traditions) and the source Kerala Vata plan supplied to the panel.

  • This book is a kitchen and menu guide. It is not medical advice. Guests with medical conditions, swallowing difficulty, kidney disease or on medication should follow their doctor's and dietitian's instructions, which always override this book.
