Kitchen guidance for March

  • Introduce barley and old (aged) rice; reduce heavy dairy sweets.

  • Bitter vegetables (karela, methi, neem flower) once daily in small portions.

  • Use honey — never heated — in place of jaggery where possible.

  • Encourage a short walk after lunch; serve lighter dinners by 7 pm.

Daily rituals: on waking — Warm water with ½ tsp honey and lemon (honey added to warm, not hot); at bedtime — Golden milk (smaller, 100 ml) with dry ginger.

Seven-day menu — March

Rotate weekly; swap any item for one from 'Further dishes & variations' at the end of this chapter. Lunch always includes rice and phulka; curd/raita is served at lunch only.

Barley must be fully soft — test a grain between fingers before serving.

Ayurvedic note

Barley (yava) is light and drying — the classical Vasanta grain; ghee balances dryness for Vata-age guests.

Chana dal is heavier — soaking, hing and a long cook make it digestible. Keep portion to 120–150 g.

Ayurvedic note

Lauki is cooling and light; it tempers the heaviness (guru) of chana.
