Using the Eastern Menus

These four seven-day menus are written for readers in East and Southeast Asia, for Asian families abroad, and for anyone who loves the Eastern table. They are separate from the Haridwar monthly menus of Volume I. Each day combines recipes from this volume (numbered, e.g. 1.04) with Indian dishes from Volumes I and II — especially South Indian dishes, whose rice, coconut, steamed batters and mild broths sit naturally beside congee, dumplings and noodle soups.

The daily foundation

[!TIP] Daily foundation items (per person)

  • With breakfast: 15 g nuts or 1 tbsp toasted sesame (or furikake, Recipe 9.04).
  • With lunch: a small bowl of rice (about 150 g cooked) if not already included — mixed-grain rice for those watching blood sugar.
  • With lunch: 100 g tofu, edamame or a small bowl of dal or adzuki beans if the lunch main has less than 12 g protein.
  • Afternoon: one piece of seasonal fruit — Asian pear, persimmon, mango or orange in season; steamed pear in dry autumn weather.
  • Bedtime: 200 ml warm milk or fortified soy milk with ginger or cardamom.
  • Together these add roughly 600 kcal and 22 g protein to the day.

With the foundation items, every day falls within or close to the range most adults over fifty need. Salt in these menus averages well under 5 g a day from the dishes themselves — provided dipping sauces and pickles are used in the spoonful amounts given in the recipes.
