The Science of Tadka (Tempering)

The Ayurvedic Kitchen

About 2 min read

Tadka — also called chhaunk, vaghar or oggarane — is the moment when spices are fried in ghee or oil and poured over a dish. It is the single most important technique in this kitchen: it releases fat-soluble aromas, makes pulses digestible, and decides whether a dal tastes flat or alive. The sequence matters because each ingredient has a different burning point.
