Food Combining — The Expanded Viruddha Guide
The Ayurvedic Kitchen
About 1 min read
Volume II (A6) introduced the classical types of incompatible food. Here is the practical kitchen list, with what to serve instead.
| Avoid combining | Why (Ayurvedic reasoning) | Serve instead |
|---|---|---|
| Milk + sour fruit (orange, pineapple, mango-sour) | Curdles; heavy, ama-forming | Fruit at 11 am; milk at bedtime |
| Milk + banana | Heavy, Kapha-forming, cold | Banana alone, or with almond milk |
| Milk + salt or salty meal | Opposite qualities; skin problems traditionally | Plain warm milk with cardamom, apart from meals |
| Milk + curd in one course | Two dairy foods of opposite nature | Kheer with dinner; raita with lunch |
| Curd at night | Kapha–Pitta aggravating | Thin buttermilk at lunch; golden milk at night |
| Heated curd | Turns it harmful in Ayurvedic view | Add curd off heat; or make kadhi with besan as a cooked takra |
| Honey + heat | Considered toxic (ama-forming) | Honey added below 40 °C |
| Ghee + honey in equal quantities | A classical incompatible dose | Use one or the other, or unequal amounts |
| Fruit + full meal | Fermentation and gas | Fruit between meals |
| Melon + anything | Digests too fast | Melon alone |
| Radish + milk | Classical incompatibility | Separate meals |
| Hot drink + cold food (or vice versa) at once | Shocks agni | Warm water with meals |
| Heavy food when digestion is weak | Agni viruddha | Krutanna ladder (Volume II, Section 1) |
| Fried food + cold drink | Very heavy | Warm herbal water |
| Leftover rice reheated repeatedly | Tamasic; food-safety risk | Cook fresh in smaller batches |
